We moved to Arizona in April 2016 to be closer to the Mayo Hospital, Mickey with his autoamune diseases the latest was gastroprosis in February of 2016. Madeline had breast cancer in 2015, was treated at the Mayo Clinic as well.
Spent many hours looking for the perfect home closer to our chosen medical facility and after looking at many we decided on the first Senior Living Community we had looked at. Pebble Creek allows potential home buyers to rent for 3 days to see what its like to live in a "resort comunity". It is a lovely area on the west side of Phoenix. There is so many activities, two club houses and golf courses and the compound has a guard at the gate. After being burglized twice we were sold on that idea, a safe and secure neighborhood.
Mickey doesn't participate in many activities, he mostly writes and rewrites on his novels, and paints on his art paintings. As for me I am involved in many clubs and sometimes I have to say NO and not go to all that is offered.
His tummy causes a few problems, the food doesn't move as quickly as it should and makes for some uncomfortable times if he eats the wrong food. No fiber, no grains. All the foods I tried to get him to eat. He likes eating the ice cream, pies, cookies. Sugar is easy to digest. Fruit is something he really misses.
Most days he feels ok, very difficult to get him to stay down even when he doesn't feel great. He has found a way to attatch a stablizing bar so he can continue to paint and not have a shakey hand. He is an ingenuis person.
Mickey and I, mostly I have been working very hard on this creation. I hope the viewers enjoy it and please let us know if something isn't correct.
Today I made a new pasta, I got a copy of my friend's Linda's recipe.
1 c sprouted wheat
plus 2 TBLS for rolling the dough
1 TBLS egg white powder
1 TBLS vital wheat gluten
1 TBLS potato starch (I bought potato flour, than realized my mistake and returned to the store and bought
the starch. The internet said there is a BIG difference between the two
¼ c water
salt, not in the dough but in the pot of boiling water
Place flour and other dry ingredients in bowl of standing mixer. Mix with dough hook about 1 minute. Add water and mix for about three more minutes. At this point the dough may seem dry, this is normal. It should hold into a ball when squeezed. (I added extra water to get it into the ball) Add a few extra drops if needed. Form into a ball and tightly wrap in a plastic wrap. Let stand for 10 minutes on the counter. Can refrigerate but let come to room temperature before using the pasta roller and cutter. Made about 1 pound of fresh pasta.
This was delicious, but I did overcook the first half. It cooks very fast when it is fresh so be careful.
I gave Mickey the end of the spaghetti sauce from Bonnie's recipe and I use olive oil and fresh basil on mine.
Life with an artist isn't all that fun. I am always trying new ways of removing the paint from his clothes, walls, carpets, drapes, floor, chair cushions etc. You get my point. Almost all of his tee-shirts have paint stains on then, a lot of pants. He never wears a "painting uniform", just starts painting when the urge strikes.
Several years ago he was diagnosed with Mysthina Gravis. This is a disease of the muscles, it starts with the weaker muscles, his was in his eyes but it can go to stronger muscles like your legs or arms and even the heart and lungs. If it progresses to heart or lungs he won't be here on earth anymore, so we do try to keep the disease in remission. His problem is he shakes and is finding it very difficult to paint the fine detail which he once did. He is still painting and I think it looks just as good as before. He is very critical of his own work.
This is my first blog and so I won't go on much longer about his painted items around our house.
Today is Father's Day, Mickey was up at 5am waiting for the kids to call. It just isn't the same as Mother's Day. He had received a card from one, an e-mail one liner from another and at 6:30 tonight he received a phone call. Wouldn't you know it, he was working on a new art picture and couldn't take the call right then but I enjoyed my visit with our daughter. He did get to talk in about 20 minutes when he finished what he was doing.
I fixed him his favorite meal, beef stroganoff with rice, cole slaw, garlic bread and peach cobbler with ice cream, ok it wash't real ice cream but frozen yogurt. I am a weight watcher and it is for our health we eat healthier items. Mickey does understand but always reminds me it isn't the same as ice cream. I also had a glass of red wine, 14 hands brand. Only one glass 5 ounces. Just like the heart association recommends.
I accidentally published the new web site late last night and it is not ready for public viewing so I am working as hard as I can trying to learn how to navigate the web design and upload all of the art pictures. I know I don't have all of the measurements so we will have to take the pictures off the wall and measure them. Best I get busy
